Grapes

Winemaking
The grapes are selected and gently pressed at our plant in Santo Stefano Belbo (5 Km from Canelli) and then the must is fermented partially to an actual alcohol content of 5.5 degrees. It is then stored at -2 ° C. until frothing.

Storage
The ideal cellar for storing wine must have a temperature between 11-15°C, there should be no temperature changes. Low power and never neon lighting. Humidity around 65-70%. Avoid storing other foods with intense and penetrating flavors and aromas.
